It is a cool rainy day in North Carolina. So I thought I would share this one pot jambalaya with you. Jambalaya is a dish that would be great to serve in the fall. You can grab some smoked sausage from your local hog farmer, and the shrimp if you aren’t allergic from a local fishing company ( I bet you didn’t think of them as farmers). The vegetables can either come from your garden or from a local farmer’s market or produce stand to make this delicious one-pot meal that will sure to hit the spot on these cool fall days.
Ingredients:
- 2 Tbsp oil
- 1 1/2 lb. chicken, diced
- 1 red bell pepper, diced
- 1 onion, diced
- 1 Lb. smoked sausage, sliced into rounds
- 4 1/2 c. low sodium chicken broth
- 1 1/2 c. tomato sauce
- 1 can Rotel diced tomatoes with green chiles
- 1 Tbsp. Cajun seasoning
- 1 Tbsp. garlic powder
- 1 Tbsp. paprika
- 1 Tbsp. onion powder
- 1 Lb. linguine
- 1 Lb. pre-cooked shrimp

Instructions
1. In a large pot, heat oil over medium heat.
2. Add chicken and cook until tender and to your liking.
3. Add remaining ingredients except for shrimp
4. Bring to a boil, stirring often, and cook for about 25 minutes or until noodles are cooked.
5. Add in the shrimp and cook for an additional 15 minutes
6. Serve and enjoy!
