It is strawberry season here in North Carolina. Did I tell y’all that I used to work at a local farm that sold strawberries. Not only did I learn that strawberries need to planted in the fall but it is truly back breaking work and just like everything else in agriculture a good strawberry crop is dependent on the weather. And you think once you get the strawberries planted your work is done? But nope that is not the case. They have to contend with wildlife eating the plants, the every changing temperatures ( using row covers to make sure the plants stay all warm and cozy.) And let’s not forget bending down and picking the strawberries, I used to be able to hack it but now I can hardly bend down to tie my shoes. So I have respect for farmers who over look these aches and pains and still get the job done. So as a salute to strawberry farmers I am sharing this yummy and light spring / summer Strawberry Feta Salad with Balsamic Glaze.
Strawberry Feta Salad with Balsamic Glaze
The combination of fresh, sweet strawberries and a rich balsamic glaze gives this light and refreshing salad an almost dessert-like quality. However, the peppery arugula and the salty Feta cheese balance out the sweetness, while the pecans add a satisfying crunch.
Prep time: 15 minutes
Cook time: 10 minutes
Serves: 4
Salad Ingredients:
2 cups Romaine lettuce, chopped
2 cups arugula
1-pint fresh strawberries, trimmed and quartered
3 oz. Feta cheese
½ cup pecan halves
Sea salt and black pepper, to taste
2 T. extra virgin olive oil
1 c. balsamic vinegar
Directions:
- Add the Romaine lettuce, arugula, strawberries, Feta cheese and pecans to a large bowl. Season with salt and black pepper, to taste, and drizzle with the olive oil. Gently toss to combine and set aside.
- To make the balsamic glaze, heat the balsamic vinegar over medium-high heat until it begins to boil. Reduce heat and simmer, stirring continually, until the liquid is reduced to about 1/3 of its original volume, approximately 8-10 minutes.
- Remove from heat and cool slightly before drizzling over the salad. Transfer the salad to individual salad bowls and serve immediately. Enjoy!
